Best RAM for Gaming in 2024 ?

I'm looking to upgrade my gaming rig and I want to make sure I get the best RAM for optimal performance. I've been doing some research but there are so many options out there, it's a bit overwhelming!

From what I understand, faster RAM with lower CAS latency is generally better for gaming. But how much of a difference does it actually make? Is it worth spending extra for high-end RAM or will mid-range options suffice?

Also, how important is RAM capacity for gaming? I typically play AAA titles and do some streaming as well. Would 16GB be enough or should I go for 32GB to be safe?

I'm aiming for 1440p gaming at high-ultra settings. Any advice from experienced builders would be much appreciated. Let me know what RAM you're using and how it's working out for you!
